After being diagnosed with Ulcerative Colitis in May 2012, I came across the Specific Carbohydrate Diet.  The thought of managing my symptoms and healing my gut through diet just made sense to me.  I read the book “Breaking the Vicious Cycle” and knew that was what I needed to do to get healthy.  However, I was 20 weeks pregnant and busy chasing after my two-year-old and the thought of completely changing my diet/lifestyle was just too overwhelming.  A month after my son was born I was done being sick and wondering what would set my stomach “off” so with the support of my husband I started the Specific Carbohydrate.  It has been quite the journey and a huge learning process, but I feel better than I EVER have.  I have had some ups and downs figuring things out, but after a year of following the diet I am excited to feel so great!

Starting out on the Specific Carbohydrate Diet was intimidating but I was encouraged to see so many resources on the internet and lots of delicious recipes.  My goal for this blog is to share Specific Carbohydrate Diet recipes and hopefully help others on their journey to health.
