It’s funny, I didn’t realize just how much I missed oatmeal cream pies until I bit into one of these. The taste and texture was exactly how I remembered it…but this time healthy. This recipe comes from one of my favorite SCD Cookbooks called “Cooking for the Specific Carbohydrate Diet” by Erica Kerwein. Erica also blogs at comfybelly.com.
I used the recipe for oatmeal Raisin Cookies on page 146 but left out the raisins and filled it with her recipe for Vanilla Frosting on page 152. Obviously these don’t contain oatmeal but the oatmeal texture comes from unsweetened shredded coconut.
Some other favortie recipes from this cookbook are the Black Bean Soup on page 62, Cinnamon Bun Muffins on page 96, and Lemon Pound Cake on page 143. It’s always nice to find a cookbook full of SCD recipes that taste great and don’t require any subsitutions or adjustments.
