Watermelon Cake


This is such a fun summertime “cake” to make!

Watermelon Cake

  • 1 small watermelon
  • 1 can coconut milk, refrigerated
  • 1 Tablespoon honey
  • 1/2 cup blueberries
  • 1 cup strawberries, hulled and sliced

Cut the ends off the watermelon and then carefully cut the rind off the sides of the watermelon to make it look like a cake.

Open the can of coconut milk and scoop the thick coconut cream off the top and mix with honey.  Spread over top of cake and decorate with strawberries and blueberries.  Slice and serve like you would a normal cake.  Enjoy!
