This is my most favorite SCD sauce and it is super simple to make!
Hollandaise Sauce seemed really intimidating to make at first but with practice you can whip it up in less than five minutes. It’s rich, creamy and tangy and tastes great on sauteed veggies or fried eggs.
- 4 egg yolks
- 1 Tablespoon lemon juice
- 1/2 cup butter, melted
- Pinch cayenne pepper
- Pinch salt
Mix egg yolks and lemon juice in small stainless steel bowl until thick. Place bowl on top of sauce pan with an inch of simmering water (this is a double boiler). Keep whisking and slowly drizzle in melted butter. Continue whisking until sauce has doubled in volume. Remove from heat and add in cayenne pepper and salt.
