Salted Pecan Sandies (SCD) - Specific Health

These salty, nutty cookies are a favorite at our house!  I remember eating Keebler brand Pecan Sandies growing up and thought it was so cool that my sister, Sandee, had a cookie named after her (even though it wasn’t spelled right).

These cookies are quick and easy to whip up (although they do have to bake a while) and the perfect thing to satisfy a sweet/salty craving.

Salted Pecan Sandies (SCD)

  • 1/4 cup honey
  • 4 Tablespoons butter
  • 2 teaspoons vanilla extract
  • 2 cups almond flour
  • 1/2 cup raw pecans
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon baking soda

Melt honey and butter and mix together.  Stir in remaining ingredients and mix until combined.

Salted Pecan Sandies (SCD) - Specific HealthDough should be the consistency of “regular” cookie dough.

Place small balls of cookie dough about an inch apart on a lightly buttered cookie sheet and press down gently to flatten.  Bake for 20 minutes or until brown (bake longer for a crispier cookie).

Makes about 2 dozen cookies.
