Fruit Snacks

fruitsnacks copy

If my two-year-old could choose one treat to eat for the rest of his life, fruit snacks would be it.  This homemade version is so good, that I think I might join him!  These fruity, chewy treats are a great alternative to the sugar-laden store bought version.  Enjoy!

Banana and Blueberry Fruit Snacks (SCD)

  • One over-ripe banana
  • 1/2 cup blueberries (fresh or frozen)
  • 1 tablespoon honey
  • 5 tablespoons unflavored gelatin
  • 1/3 cup lemon juice

Pour lemon juice in a small bowl.  Stir in gelatin and set aside.

1

Cook fruit over medium heat for about 10 minutes, until very soft.  Stir in honey until dissolved.  Blend ingredients in blender until smooth.

2

Add lemon juice and gelatin mixture and blend until combined.  Pour into an 8×8 (or similar size) glass dish.

4Refrigerate until set, about 30 minutes.  Cut into cubes and store in an airtight container in the fridge.

A few notes:

  • I used this beef gelatin which is tasteless and odorless.  Do not use KNOX gelatin that comes in little pouches or it will taste disgusting!  I tried making fruit snacks with it and it was so gross that I threw away the whole batch.
  • I haven’t tried it yet, but I’m sure an fruit combination would work as long as it equals 1 cup.
