If my two-year-old could choose one treat to eat for the rest of his life, fruit snacks would be it. This homemade version is so good, that I think I might join him! These fruity, chewy treats are a great alternative to the sugar-laden store bought version. Enjoy!
Banana and Blueberry Fruit Snacks (SCD)
- One over-ripe banana
- 1/2 cup blueberries (fresh or frozen)
- 1 tablespoon honey
- 5 tablespoons unflavored gelatin
- 1/3 cup lemon juice
Pour lemon juice in a small bowl. Stir in gelatin and set aside.
Cook fruit over medium heat for about 10 minutes, until very soft. Stir in honey until dissolved. Blend ingredients in blender until smooth.
Add lemon juice and gelatin mixture and blend until combined. Pour into an 8×8 (or similar size) glass dish.
A few notes:
- I used this beef gelatin which is tasteless and odorless. Do not use KNOX gelatin that comes in little pouches or it will taste disgusting! I tried making fruit snacks with it and it was so gross that I threw away the whole batch.
- I haven’t tried it yet, but I’m sure an fruit combination would work as long as it equals 1 cup.
