Key Lime Pie Bites (SCD)
- 1 cup raw almonds
- 1 cup dates, pitted
- 2 tablespoons unsweetened, shredded coconut (plus more for rolling)
- 3 tablespoons lime juice (more to taste)
- a pinch of sea salt
Add all ingredients to blender or food processor and pulse until desired consistency is reached. I like a finer mixture, opposed to chunkier. Roll dough into one-inch balls and roll in shredded coconut. Store in an airtight container in the refrigerator.
Makes about 1 dozen one-inch bites.
